Zucchini Bites

A Week of Zucchini ~ Day 5 ~ Zucchini Bites
This is my first year growing these Baby Globe Zucchini.  I think they are just so darn cute, looking like they are going to be little green pumpkins, but they are every bit a zucchini.  
Having some beautiful Dr Wyche Heirloom tomatoes, one of the best tasting yellow tomatoes to be found, ready to harvest at the same time as the zucchini started the wheels turning.
  We regularly grill zucchinis sliced in half lengthwise, tossed with olive oil and garlic pepper, grilled a couple of minutes per side and sprinkled with fresh grated Parmesan when plated.  It's one of my favorites.
The little round guys seemed like a perfect platform for a layered appetizer.  Slice the zucchini between 1/4-1/2" thick, brush one side with olive oil, grill for several minutes, then turn over.  Quickly spread some ready made pesto over the top of each, add a nice slice of your favorite tomato, cracked pepper and finish with freshly grated Pecorino or whatever cheese you have on hand; Blue cheese is great!
These need to be eaten with a knife and fork because they are quite juicy.
