Today I harvested two Kabocha squash. This is a new squash to the United States. but has been a staple in Japan for a long time. It's loaded with nutrients like beta carotene, especially if you eat the thin skin.
I absolutely love working in the garden. I consider it my therapy, not a chore. What's even better is when I can cook with ingredients fresh from the garden.
